Air Fryer Teriyaki Tofu

Golden tofu cubes tossed in a sticky homemade teriyaki glaze that caramelises in the air fryer. Cornflour gives each piece a crisp shell that grips the sweet-savoury sauce, making a fast weeknight bowl that beats any takeaway.
Ingredients
- 1 block (400g) firm tofu, pressed and cubed
- 1 tbsp cornflour
- 1 tbsp soy sauce
- 3 tbsp soy sauce (for glaze)
- 2 tbsp maple syrup
- 1 tbsp rice vinegar
- 1 clove garlic, grated
- 1 tsp grated ginger
- 1 tsp toasted sesame seeds
Method
- 1Toss the pressed tofu cubes with 1 tbsp soy and the cornflour until evenly coated.
- 2Preheat the air fryer to 200°C (400°F).
- 3Air fry the tofu for 15-18 minutes, tossing halfway, until crisp and golden on all sides.
- 4Meanwhile simmer soy, maple, vinegar, garlic and ginger until thick and glossy.
- 5Toss the hot tofu through the glaze until every piece is coated.
- 6Scatter with sesame seeds and serve over rice with greens.
Tips for the best results
- Coat in cornflour just before cooking so it stays dry and crisps well.
- Glaze the tofu after air frying, not before, or the sugars will scorch.
- Add a pinch of chilli flakes to the sauce for a spicy kick.
