Air Fryer Vegan Meatballs

Plant-based mince rolled into seasoned meatballs and air fried until browned and juicy. The air fryer gives them a crisp exterior without a pan of oil, so they come out evenly cooked and ready for pasta or subs in minutes.
Ingredients
- 400g plant-based mince
- 4 tbsp breadcrumbs
- 1/2 onion, grated
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp smoked paprika
- Salt and pepper
- Spray oil
Method
- 1Mix the plant mince with breadcrumbs, onion, garlic, tomato paste and seasonings.
- 2Roll into evenly sized balls.
- 3Preheat the air fryer to 190°C (375°F).
- 4Mist with oil and air fry for 10-14 minutes, tossing halfway, until browned.
- 5Check they are firm and heated through.
- 6Toss in warm marinara and serve.

- Grate the onion so it disappears into the mix and adds moisture.
- Keep the balls uniform for even cooking.
- Do not overcrowd the basket so they brown all over.
