Air Fryer Vegetable Pakora

Spiced mixed-vegetable pakoras in a crisp gram-flour batter, a beloved Indian snack lightened for the air fryer. Chunks of potato, cauliflower and onion turn golden and fragrant with only a light mist of oil.
Ingredients
- 150 g gram (chickpea) flour
- 1 potato, grated
- 150 g cauliflower, chopped small
- 1 onion, sliced
- 1 tsp garam masala
- 1/2 tsp turmeric
- 1/2 tsp chilli powder
- 1 tsp salt
- 4 tbsp water
- Spray oil
Method
- 1Combine gram flour, spices and salt, then add the vegetables and just enough water to make a thick, coating batter.
- 2Preheat the air fryer to 190°C/375°F and line with perforated paper.
- 3Drop rough spoonfuls onto the paper, spacing them apart, and mist with oil.
- 4Cook for 12-14 minutes, flipping halfway, until crisp and golden.
- 5Mist again if any dry patches appear during cooking.
- 6Serve hot with tamarind or mint chutney.

- Chop the vegetables small so they cook through in time.
