Air Fryer Vegetable Pakora

Spiced mixed-vegetable pakoras in a crisp gram-flour batter, a beloved Indian snack lightened for the air fryer. Chunks of potato, cauliflower and onion turn golden and fragrant with only a light mist of oil.

Ingredients

  • 150 g gram (chickpea) flour
  • 1 potato, grated
  • 150 g cauliflower, chopped small
  • 1 onion, sliced
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp chilli powder
  • 1 tsp salt
  • 4 tbsp water
  • Spray oil

Method

  1. 1Combine gram flour, spices and salt, then add the vegetables and just enough water to make a thick, coating batter.
  2. 2Preheat the air fryer to 190°C/375°F and line with perforated paper.
  3. 3Drop rough spoonfuls onto the paper, spacing them apart, and mist with oil.
  4. 4Cook for 12-14 minutes, flipping halfway, until crisp and golden.
  5. 5Mist again if any dry patches appear during cooking.
  6. 6Serve hot with tamarind or mint chutney.
