Air Fryer Vegetable Pakoras

Mixed vegetables coated in a spiced gram-flour batter and air fried into crunchy pakoras. The air fryer crisps the batter without a pan of hot oil, turning cauliflower, potato and spinach into an irresistible Indian snack.

Ingredients

  • 150g cauliflower, small florets
  • 1 potato, thinly sliced
  • 1 handful spinach
  • 100g chickpea flour
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1/2 tsp chilli powder
  • 1/2 tsp ground turmeric
  • Spray oil

Method

  1. 1Mix the chickpea flour with the spices and enough water for a thick batter.
  2. 2Fold in the cauliflower, potato and spinach until coated.
  3. 3Preheat the air fryer to 190°C (375°F).
  4. 4Drop small clusters into the basket and mist with oil.
  5. 5Air fry for 12-16 minutes, flipping halfway, until golden and crisp.
  6. 6Serve hot with tamarind or mint chutney.

  • Slice the potato thinly so it cooks through in time.
  • Keep the batter thick so it clings to the veg.
