Air Fryer Vegetable Pakoras

Mixed vegetables coated in a spiced gram-flour batter and air fried into crunchy pakoras. The air fryer crisps the batter without a pan of hot oil, turning cauliflower, potato and spinach into an irresistible Indian snack.
Ingredients
- 150g cauliflower, small florets
- 1 potato, thinly sliced
- 1 handful spinach
- 100g chickpea flour
- 1 tsp ground cumin
- 1 tsp garam masala
- 1/2 tsp chilli powder
- 1/2 tsp ground turmeric
- Spray oil
Method
- 1Mix the chickpea flour with the spices and enough water for a thick batter.
- 2Fold in the cauliflower, potato and spinach until coated.
- 3Preheat the air fryer to 190°C (375°F).
- 4Drop small clusters into the basket and mist with oil.
- 5Air fry for 12-16 minutes, flipping halfway, until golden and crisp.
- 6Serve hot with tamarind or mint chutney.
Tips for the best results
- Slice the potato thinly so it cooks through in time.
- Keep the batter thick so it clings to the veg.
- Do not crowd the basket so each cluster crisps.
