Air Fryer Vegetable Skewers

Colourful chunks of pepper, courgette, mushroom and onion marinated in herbs and charred in the air fryer. The circulating heat gives a barbecue-style finish indoors, making a fresh, smoky side or light main any night.

Ingredients

  • 1 red pepper, chunked
  • 1 courgette, sliced
  • 8 button mushrooms
  • 1 red onion, chunked
  • 8 cherry tomatoes
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • 2 cloves garlic, minced

Method

  1. 1Whisk oil, balsamic, oregano and garlic into a marinade.
  2. 2Toss the vegetables to coat and rest for 10 minutes.
  3. 3Thread onto skewers, alternating the colours.
  4. 4Preheat the air fryer to 200°C (400°F).
  5. 5Air fry for 12-15 minutes, flipping halfway, until tender and charred.
  6. 6Serve with rice, couscous or flatbreads.

  • Cut everything a similar size for even cooking.
