Air Fryer Vegetable Skewers

Colourful chunks of pepper, courgette, mushroom and onion marinated in herbs and charred in the air fryer. The circulating heat gives a barbecue-style finish indoors, making a fresh, smoky side or light main any night.
Ingredients
- 1 red pepper, chunked
- 1 courgette, sliced
- 8 button mushrooms
- 1 red onion, chunked
- 8 cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp dried oregano
- 2 cloves garlic, minced
Method
- 1Whisk oil, balsamic, oregano and garlic into a marinade.
- 2Toss the vegetables to coat and rest for 10 minutes.
- 3Thread onto skewers, alternating the colours.
- 4Preheat the air fryer to 200°C (400°F).
- 5Air fry for 12-15 minutes, flipping halfway, until tender and charred.
- 6Serve with rice, couscous or flatbreads.

- Cut everything a similar size for even cooking.
- Halve wooden skewers so they fit the basket.
- Brush with leftover marinade near the end for more flavour.
