Air Fryer Veggie Burgers

Wholesome patties packed with beans, vegetables and grains, crisp outside and tender within. The air fryer gives them a browned, satisfying crust without shallow frying, so they hold firm from basket to bun.
Ingredients
- 1 tin (400g) kidney beans, drained
- 1 carrot, grated
- 1/2 onion, diced
- 80g cooked brown rice
- 5 tbsp breadcrumbs
- 1 egg
- 1 tsp smoked paprika
- 1 tsp ground cumin
- Spray oil
Method
- 1Mash the beans and mix with carrot, onion, rice, breadcrumbs, egg and spices.
- 2Shape into four firm patties and chill for 10 minutes.
- 3Preheat the air fryer to 190°C (375°F).
- 4Mist with oil and air fry for 12-15 minutes, flipping halfway, until golden.
- 5Check they are firm and heated through.
- 6Serve in buns with lettuce, tomato and your favourite sauce.

- Squeeze excess moisture from the grated carrot for a firmer patty.
- The egg binds the mix; use a flax egg to keep it vegan.
- Cooked rice adds body and a pleasant chew.
