Air Fryer Veggie Burgers

Wholesome patties packed with beans, vegetables and grains, crisp outside and tender within. The air fryer gives them a browned, satisfying crust without shallow frying, so they hold firm from basket to bun.

Ingredients

  • 1 tin (400g) kidney beans, drained
  • 1 carrot, grated
  • 1/2 onion, diced
  • 80g cooked brown rice
  • 5 tbsp breadcrumbs
  • 1 egg
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • Spray oil

Method

  1. 1Mash the beans and mix with carrot, onion, rice, breadcrumbs, egg and spices.
  2. 2Shape into four firm patties and chill for 10 minutes.
  3. 3Preheat the air fryer to 190°C (375°F).
  4. 4Mist with oil and air fry for 12-15 minutes, flipping halfway, until golden.
  5. 5Check they are firm and heated through.
  6. 6Serve in buns with lettuce, tomato and your favourite sauce.

  • Squeeze excess moisture from the grated carrot for a firmer patty.
  • The egg binds the mix; use a flax egg to keep it vegan.
