Of 304 air fryer recipes, 140 (46%) ask you to flip or turn the food once, 90 (30%) need no attention at all, 40 ask for one shake, and 34 need shaking every few minutes. Large flat pieces get flipped, small loose pieces get shaken, and bakes are left alone.

How to tell which your food needs

Flip anything that sits flat on the basket: chops, fillets, burgers, chicken pieces. The underside is shielded from the airflow, so it needs its turn facing up.

Shake anything small and loose: chips, sprouts, florets, popcorn chicken. Shaking moves pieces from the middle of the pile to the outside, where the air reaches them.

Leave alone anything that would fall apart or spill: cakes, eggs, anything in a tin, and delicate fish. Those cook from the top, and the lower temperature gives the heat time to reach the base.
