Chicken is the single best thing an air fryer does. Circulating hot air crisps skin the way a grill does while the fast cook time keeps the inside from drying out, which is exactly the balance an oven struggles with. Every recipe below lists the internal temperature, because that - not the clock - is what tells you chicken is done.

Every cut needs a different temperature

Breast wants a moderate 180°C / 360°F so the outside does not tighten before the middle is cooked. Thighs and drumsticks want 200°C / 400°F to render the fat under the skin. Wings want the highest heat you have, because crisp skin is the whole point.

The one number that never changes is 74°C / 165°F in the thickest part. A cheap instant-read thermometer removes all guesswork here and is the single best air fryer accessory you can buy.

Getting skin genuinely crisp

Pat the chicken completely dry before it goes anywhere near oil or seasoning. Surface moisture has to boil off before browning can start, so a wet bird spends its first five minutes steaming itself.

Then give it room. Overlapping pieces trap steam between them and you will pull out patches of pale, rubbery skin. Cook in two batches rather than crowding one.

Frequently Asked Questions

What temperature do you air fry chicken?

Breast at 180°C / 360°F, thighs and drumsticks at 200°C / 400°F, wings at 200°C / 400°F. Whatever the cut, cook until the thickest part reaches 74°C / 165°F.

Can you air fry raw chicken?

Yes - raw chicken is what an air fryer handles best. Cook to 74°C / 165°F internal and check the thickest part, not the edge. There is no food-safety reason to part-cook it first.

Why is my air fryer chicken dry?

Almost always breast cooked too hot or too long. Drop to 180°C / 360°F, pull it the moment it hits 74°C / 165°F, and rest it five minutes. Or switch to thighs, which are far more forgiving.

Do you flip chicken in an air fryer?

Flip breasts, thighs and drumsticks once at the halfway point for even colour. Wings and small pieces like tenders benefit more from a shake than a flip.

Can you air fry frozen chicken?

Yes, but add roughly 50% to the cook time and drop the temperature about 10°C / 25°F so the outside does not burn before the centre thaws. Always confirm 74°C / 165°F internal.
