Pork is arguably the cut of meat that benefits most from an air fryer, because so much of it is about rendering fat and crisping skin. Belly gets genuine crackling, bacon renders flat instead of curling, and chops stay juicy because the cook time is short enough not to dry them out.

Getting real crackling

Score the skin, then dry it as thoroughly as you can - overnight uncovered in the fridge if you have the time. Rub salt into the scores. Water is the enemy of crackling and salt pulls it out.

Then use two temperatures: 160°C / 320°F for the first two-thirds to render the fat underneath, then 200°C / 400°F for the last 10 minutes to puff and crisp the skin. One temperature throughout gives you either soft skin or burnt meat.

Pork is safe at 63°C, not 71°C

Guidance changed years ago but the habit has not caught up. Whole cuts of pork - chops, tenderloin, joints - are safe at 63°C / 145°F with a three-minute rest, and they will be faintly pink in the middle. That is correct, not undercooked.

Minced pork and sausages are the exception and do need 71°C / 160°F, because grinding distributes any surface bacteria through the meat.

Frequently Asked Questions

What temperature for pork in an air fryer?

Chops and tenderloin at 190°C / 375°F. Pork belly needs two stages: 160°C / 320°F to render, then 200°C / 400°F to crisp the skin. Sausages at 180°C / 360°F.

What internal temperature should pork reach?

Whole cuts are safe at 63°C / 145°F with a three-minute rest and will be slightly pink. Minced pork and sausages need 71°C / 160°F.

Can you get crackling in an air fryer?

Yes, and it works better than an oven. Score and dry the skin thoroughly, salt the scores, render at 160°C / 320°F, then finish at 200°C / 400°F for the last 10 minutes.

Why are my air fryer pork chops dry?

Cooked to 71°C / 160°F out of habit. Pull them at 63°C / 145°F and rest three minutes. Thin chops also overcook fast - a thicker cut is much more forgiving.
