Baking in an air fryer sounds wrong until you realise it is just a very small fan oven. That is actually an advantage for desserts: it reaches temperature in two minutes, browns the top beautifully, and costs a fraction of running a full oven for one tray of cookies.

Bake lower than the recipe says

Take about 20°C / 25°F off any conventional oven baking temperature. Air fryers sit much closer to the heating element and move air far more aggressively, so a cake baked at the oven temperature will set a crust before the middle has risen.

Check early, too. Most air fryer bakes finish 20-25% faster than the oven version, and a dessert goes from perfect to dry in the space of two minutes.

What you need to cover

Anything with a loose batter or a light topping needs foil over it for the first two-thirds of the bake. Without it the fan will either scorch the surface or physically blow the topping around the basket.

Cake tins, silicone moulds and ramekins all work as long as there is a finger of clearance around them for air to move. A tin that fills the basket edge to edge will bake unevenly no matter what temperature you use.

Frequently Asked Questions

Can you bake a cake in an air fryer?

Yes. Use a tin that leaves a couple of centimetres of clearance around it, drop the temperature about 20°C / 25°F below the recipe, and cover the top with foil for the first two-thirds so the fan does not scorch it.

What temperature do you bake desserts in an air fryer?

Most sit between 150°C / 300°F and 170°C / 340°F. Cookies and doughnuts are at the higher end, cakes and anything custard-based at the lower end.

Why did my air fryer cake sink?

Usually the basket was opened too early, or the temperature was too high so the outside set while the centre was still liquid. Leave it alone for the first two-thirds of the bake and use a lower temperature.

Can you use parchment paper for air fryer desserts?

Yes, and for sticky bakes you should. Use perforated parchment cut to size, put it in only once the food is on top of it, and never preheat with an empty sheet in the basket - it will lift into the element.
