If you only ever cook one thing in an air fryer, it will be potatoes. Chips with a fraction of the oil, roast potatoes in 25 minutes rather than an hour, and jacket potatoes with skin that actually crackles. This is the collection that pays for the appliance.

Soak, dry, then cook

For chips and fries, soak the cut potatoes in cold water for 30 minutes to wash off surface starch, then dry them completely. Starch left on the surface goes gummy and glues chips together in the basket.

Drying matters as much as soaking. Damp chips steam for the first five minutes, and you cannot recover crispness later - the window for building a crust has already gone.

Which potato for which job

Floury varieties - Maris Piper, Russet, King Edward - are what you want for chips, roasties and jackets. They collapse slightly at the edges, and those broken surfaces are what turn into crust.

Waxy potatoes like Charlotte or new potatoes hold their shape and stay dense, which makes them wrong for chips but ideal for halved and roasted whole, or for a potato salad you want to warm through.

Frequently Asked Questions

How long do potatoes take in an air fryer?

Chips and fries 15-20 minutes at 200°C / 400°F. Roast potatoes 20-25 minutes after parboiling. A whole jacket potato takes 35-45 minutes at 200°C / 400°F depending on size.

Do you need to soak potatoes before air frying?

For chips and fries, yes - 30 minutes in cold water removes surface starch that would otherwise go gummy. Dry them thoroughly afterwards or they will steam instead of crisping.

How much oil do air fryer chips need?

About a tablespoon per basket, tossed through so every piece is coated. That is roughly a tenth of what deep frying uses and it is enough for a proper crust.

Why are my air fryer chips not crispy?

Overloaded basket, or the potatoes went in wet. Cook in a single layer with gaps, dry them completely first, and salt only after cooking - early salt draws moisture back to the surface.

Can you air fry potatoes without parboiling?

For chips and wedges, yes. For roast potatoes, parboiling for 8 minutes first is what gives you a fluffy interior and rough edges that crisp - skip it and they stay dense.
