Beef in an air fryer surprises people, because the obvious objection is that you cannot get a proper sear without a hot pan. In practice a preheated basket at maximum temperature browns a steak perfectly well, and it does it without filling the kitchen with smoke. Every recipe below gives you internal temperatures, since doneness is the whole game with beef.

Steak doneness by internal temperature

Rare is 52°C / 125°F, medium-rare 57°C / 135°F, medium 63°C / 145°F, and well done 71°C / 160°F. Pull the steak about 2°C below your target, because it keeps cooking while it rests.

Rest it for five minutes under loose foil. This is not optional - cutting straight in loses the juices onto the board, and a rested steak of the same internal temperature simply eats better.

Preheat properly for beef, unlike everything else

For most food a preheat is optional. For steak and burgers it is the difference between a sear and a slow grey braise. Run the basket empty at maximum for 4-5 minutes before the meat goes in.

Pat the surface completely dry as well. A wet steak spends its first two minutes boiling off water instead of browning, and by the time it starts to colour the inside is already past medium.

Frequently Asked Questions

Can you cook steak in an air fryer?

Yes, and it works well. Preheat the basket empty at maximum for 4-5 minutes, pat the steak dry, then cook 8-12 minutes depending on thickness and target doneness, flipping halfway.

Rare 52°C / 125°F, medium-rare 57°C / 135°F, medium 63°C / 145°F, well done 71°C / 160°F. Pull it 2°C early and rest for five minutes.

How long do burgers take in an air fryer?

10-14 minutes at 190°C / 375°F, flipping once. Beef burgers should reach 71°C / 160°F internal since the meat is minced.

Do you need to flip beef in an air fryer?

Yes for steaks, burgers and anything flat - flip once at halfway for even browning. Meatballs are better shaken than flipped.
