Fish is the food most people are nervous about cooking, and an air fryer takes most of that risk away. There is no pan to stick to, no flipping a delicate fillet, and the cook times are so short - usually 8 to 12 minutes - that there is little opportunity to overdo it. Your kitchen also smells considerably less than after pan-frying.

Stop fish sticking to the basket

Skin-on fillets go skin-side down and generally release fine once the skin has crisped. Skinless fillets are the problem, and the answer is a piece of perforated parchment cut to size, added only once the fish is sitting on top of it.

Do not try to move the fish early. Fish releases itself when a crust has formed; poking at it after four minutes is what tears fillets apart.

Knowing when seafood is done

Salmon and most white fish are cooked at 63°C / 145°F internal, or when the flesh flakes cleanly under gentle pressure from a fork. Salmon is arguably better pulled a couple of degrees early and left to rest.

Shrimp need no thermometer at all - they curl into a loose C and turn opaque pink, and that takes 6-8 minutes at 200°C / 400°F. A tight O shape means they have gone too far and will be rubbery.

Frequently Asked Questions

How long does fish take in an air fryer?

Most fillets take 8-12 minutes at 200°C / 400°F, depending on thickness. Salmon is around 9-11 minutes; thin white fish like cod can be done in 8.

How do you stop fish sticking in an air fryer?

Cook skin-side down for skin-on fillets, and use perforated parchment for skinless ones. Do not try to move the fish before a crust has formed or it will tear.

How long do shrimp take in an air fryer?

6-8 minutes at 200°C / 400°F. They are done when they turn opaque and curl into a loose C shape - a tight O means overcooked.

Can you air fry frozen fish?

Yes, and breaded frozen fish is one of the best things an air fryer cooks. Do not thaw first. Add about 50% to the fresh cook time and check it flakes cleanly.

Does air frying fish make the kitchen smell?

Far less than pan-frying, because the fish is enclosed and there is no hot oil aerosolising. Wash the basket promptly, though, or the smell lingers in it.
