Why turning it up is not a shortcut

Heat reaches the middle of food by conduction, which is slow and depends on thickness far more than on air temperature. A hotter basket browns the surface sooner but does little to speed up the centre.

So raising the temperature on a thick food gives you a dark outside and an undercooked middle. The time on a recipe and its temperature are a matched pair. Change one and you need to rethink the other, and the internal temperature is the check that tells you whether it worked.
