Overloading, and why more time does not fix it
When food overlaps, the pieces in contact trap steam between them. Steam keeps the surface at boiling point, and browning cannot begin until the surface is dry.
So leaving it in longer does not rescue a crowded basket - it just gives you soft food that is also overcooked. Two batches, single layer, always.
The salt timing mistake
Salt draws water out of food by osmosis. Applied before cooking, it pulls moisture to exactly the surface you are trying to dry out.
For chips, roast potatoes and vegetables, salt after cooking. For meat it matters less, because the fat rendering out does the browning anyway.
Oil: the two opposite errors
Pouring oil into the basket is the first. It pools in the bottom, smokes, and never reaches the food. Toss the food in oil in a bowl first instead.
Using none at all on fresh vegetables is the second. They have no fat of their own, so with a bare basket they dehydrate and go leathery rather than roasting. A teaspoon is the right amount.
