Thick, meaty halibut fillets with a lemon garlic butter finish, cooked to moist, flaky perfection. The air fryer's even heat prevents this lean fish from drying out.
Ingredients
- 4 halibut fillets
- 30 g butter, melted
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp lemon pepper seasoning
- Juice of 1 lemon
- Salt to taste
- Parsley, to garnish
Method
- 1Pat the halibut dry and brush with olive oil.
- 2Mix the butter, garlic, lemon pepper and salt, then brush over the fish.
- 3Preheat the air fryer to 200°C/400°F for 3 minutes.
- 4Air fry for 10-12 minutes, flipping gently halfway, until it flakes and reaches 63°C/145°F.
- 5Squeeze over the lemon juice.
- 6Garnish with parsley and serve.

- Halibut is lean, so do not overcook; pull it as soon as it flakes.
- A splash of white wine in the butter adds depth.
