Air Fryer Zucchini Fritters

Grated courgette bound with feta and herbs, air fried into crisp, savoury fritters. Squeezing out the moisture is the trick to a crunchy edge, and the air fryer delivers it with barely any oil for a light, moreish bite.
Ingredients
- 2 courgettes, grated
- 1/2 tsp salt
- 1 egg
- 80g flour
- 50g feta, crumbled
- 2 spring onions, sliced
- 2 tbsp chopped dill
- 1/2 tsp baking powder
- Spray oil
Method
- 1Toss the grated courgette with salt and leave 10 minutes, then squeeze dry.
- 2Mix with egg, flour, feta, spring onions, dill and baking powder.
- 3Shape into small patties.
- 4Preheat the air fryer to 190°C (375°F).
- 5Mist with oil and air fry for 11-14 minutes, flipping halfway, until golden.
- 6Serve with a garlicky yoghurt dip.
