Air Fryer vs Convection Oven: Which Should You Use?

Same technology, different scale - and why the small one crisps better.

Updated 9 September 2026

Yes, they are the same technology - the air fryer just does it harder and smaller

Both use a fan to circulate hot air. An air fryer has a tiny chamber, a much faster fan and a perforated basket, which is why it crisps better despite being the cheaper appliance.

Technically an air fryer is a convection oven. Both cook by moving hot air with a fan rather than relying on radiant heat. The differences are all in the engineering: chamber size, fan speed, and whether air can reach the underside of the food.

Why a smaller chamber crisps better

Crisping is about removing surface moisture faster than it can accumulate. In a small chamber the same fan power produces far higher air velocity across the food, so moisture is stripped away as it evaporates rather than hanging around as steam.

The perforated basket matters just as much. Food on a solid oven tray steams underneath while the top browns, which is why oven chips need turning and air fryer chips only need a shake.

Do you need both?

If you already have a good convection oven, an air fryer is a convenience purchase rather than a capability purchase - it will not cook anything your oven cannot, it will just do small portions faster and crisper.

The case for buying one anyway is the preheat and the running cost for one or two portions, which is where a 60-litre oven is enormously wasteful.

Frequently Asked Questions

Is an air fryer the same as a convection oven?+

Same principle - a fan circulating hot air. The air fryer has a much smaller chamber, a faster fan and a perforated basket, which together make it crisp better on small items.

Can I use my convection oven instead of an air fryer?+

Yes, for almost everything. Use the convection or fan setting, put food on a wire rack rather than a solid tray so air reaches underneath, and expect it to take longer.

Do I need an air fryer if I have a convection oven?+

Not for capability - only for convenience. The gains are a two-minute preheat and much lower energy use for one or two portions.

Which is better for chips?+

The air fryer, clearly. The perforated basket lets air reach the underside, so chips crisp all over instead of steaming against a tray.
