An air fryer uses dry heat to crisp surfaces. A pressure cooker uses trapped steam to tenderise tough cuts fast. Buy for the food you cook: crisp and quick, or braised and tender.

These get compared because they arrived on kitchen counters at the same time, but they do opposite things. An air fryer drives moisture off the surface of food. A pressure cooker traps moisture in and uses it to break down connective tissue. Almost nothing one does well, the other does at all.

Pick by what you cook, not by which is newer

If your weeknights are chips, chicken, fish, frozen food and reheated leftovers, the air fryer is the obvious choice and the pressure cooker will sit in a cupboard.

If they are curries, chilli, stews, pulled pork, dried beans and stock, the pressure cooker will earn its place and the air fryer will feel like a novelty.

Combination models

Several manufacturers sell a pressure cooker with a second air-frying lid, which genuinely covers both jobs - pressure cook a joint until tender, then swap lids to crisp the outside.

The compromise is bulk and a fiddly lid swap. Two separate appliances perform better if you have the counter space, but a combination unit is a reasonable answer to a small kitchen.
