126 of the 304 air fryer recipes on this site (41%) give an internal temperature to cook to. The most common target is 74°C / 165°F, used by 46 recipes for poultry. 37 recipes use 63°C / 145°F for fish and whole cuts, and 35 use 71°C / 160°F for minced meat, sausages and egg dishes.

Why the thermometer beats the timer
Air fryer times are starting points. The same chicken breast can take 18 minutes in one model and 23 in another, and a thicker piece shifts it again. The internal temperature is the only figure that does not change with the appliance.
Probe the thickest part, away from bone. For mince and sausages, check the centre of the largest piece. An instant-read thermometer costs less than a pack of chicken and removes the guesswork.
