Updated 7 September 2026
Thick slabs of cauliflower roasted until the edges caramelise and the centre turns tender and sweet. The air fryer chars them like a griddle without heating the oven, making a striking meat-free centrepiece in under twenty minutes.
Ingredients
- 1 large cauliflower
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp ground cumin
- 1/2 tsp salt
- Black pepper
- Fresh parsley, to serve
Method
- 1Trim the cauliflower and slice through the core into two thick steaks.
- 2Brush both sides with oil and rub with the mixed spices.
- 3Preheat the air fryer to 200°C (400°F).
- 4Air fry the steaks for 15-18 minutes, flipping halfway, until golden and tender.
- 5Check the centre is soft with a knife tip.
- 6Scatter with parsley and serve with a dip or grain.
Tips for the best results
- Cut through the core so the steaks stay in one piece.
- Save any loose florets to roast alongside.
