Meaty portobello caps marinated in garlic and balsamic, then air fried until juicy and deeply savoury. The air fryer concentrates their flavour and drives off excess water, giving a robust burger filling or steak-style plate.

Ingredients

  • 4 large portobello mushrooms
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Black pepper
  • Fresh parsley, to serve

Method

  1. 1Wipe the mushrooms and remove the stems.
  2. 2Whisk oil, balsamic, soy, garlic and thyme, then brush over the caps.
  3. 3Let them marinate for 10 minutes, gill-side up.

  5. 5Air fry for 8-11 minutes, flipping halfway, until tender and juicy.
