Meaty portobello caps marinated in garlic and balsamic, then air fried until juicy and deeply savoury. The air fryer concentrates their flavour and drives off excess water, giving a robust burger filling or steak-style plate.
Ingredients
- 4 large portobello mushrooms
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Black pepper
- Fresh parsley, to serve
Method
- 1Wipe the mushrooms and remove the stems.
- 2Whisk oil, balsamic, soy, garlic and thyme, then brush over the caps.
- 3Let them marinate for 10 minutes, gill-side up.
- 4Preheat the air fryer to 190°C (375°F).
- 5Air fry for 8-11 minutes, flipping halfway, until tender and juicy.
- 6Scatter with parsley and serve whole or sliced.
