Ingredients

  • 150 g (about 10) digestive biscuits, crushed
  • 60 g (1/4 cup) melted butter
  • 400 g (14 oz) full-fat cream cheese
  • 100 g (1/2 cup) caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tbsp soured cream
  • 1 tbsp plain flour

Method

  1. 1Mix the crushed biscuits with melted butter and press firmly into a lined springform tin.
  2. 2Beat the cream cheese and sugar until smooth, then beat in the eggs one at a time.
  3. 3Stir through the vanilla, soured cream and flour until just combined and lump-free.
