Air Fryer Bread Pudding

A comforting, custardy bread pudding with a crisp golden top and soft, spiced centre, a brilliant way to use up stale bread. The air fryer sets the custard gently while giving the top a lovely caramelised finish.
Ingredients
- 4 thick slices day-old bread, cubed
- 2 eggs
- 250 ml (1 cup) milk
- 50 g (1/4 cup) caster sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 40 g (1/4 cup) raisins
- 20 g (1 1/2 tbsp) melted butter
Method
- 1Whisk the eggs, milk, sugar, vanilla and cinnamon into a custard.
- 2Add the bread cubes and raisins and toss to soak; leave for 10 minutes.
- 3Tip into a greased air-fryer-safe dish and drizzle with melted butter.
- 4Preheat the air fryer to 160°C/320°F.
- 5Bake for 20-25 minutes until set in the centre and golden on top.
- 6Rest for 5 minutes and serve warm with cream or custard.
Tips for the best results
- Slightly stale bread soaks up the custard far better than fresh.
- Brioche or challah makes an especially rich pudding.
