Air Fryer Teriyaki Chicken

Tender chicken glazed in a glossy sweet-savoury teriyaki sauce with a hint of ginger. The air fryer caramelises the glaze into a sticky lacquer while keeping the chicken juicy, perfect served over steamed rice.
Ingredients
- 700 g chicken thighs, boneless
- 4 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp brown sugar
- 1 tbsp grated ginger
- 2 cloves garlic, minced
- 1 tsp sesame oil
- 1 tsp cornflour
Method
- 1Mix the soy, mirin, sugar, ginger, garlic and sesame oil, then marinate the chicken for 20 minutes.
- 2Preheat the air fryer to 190°C (375°F).
- 3Cook for 16-20 minutes, flipping halfway.
- 4Simmer the reserved marinade with the cornflour into a glossy glaze.
- 5Check the chicken reaches 74°C (165°F), then brush with the glaze.
- 6Serve over rice with sesame seeds and spring onion.
Tips for the best results
- Always cook the leftover marinade before using it as a sauce.
- Mirin adds authentic sweetness, but a little extra sugar works too.
