Tender chicken glazed in a glossy sweet-savoury teriyaki sauce with a hint of ginger. The air fryer caramelises the glaze into a sticky lacquer while keeping the chicken juicy, perfect served over steamed rice.

Ingredients

  • 700 g chicken thighs, boneless
  • 4 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tbsp brown sugar
  • 1 tbsp grated ginger
  • 2 cloves garlic, minced
  • 1 tsp sesame oil
  • 1 tsp cornflour

Method

  1. 1Mix the soy, mirin, sugar, ginger, garlic and sesame oil, then marinate the chicken for 20 minutes.
  2. 2Preheat the air fryer to 190°C (375°F).
  3. 3Cook for 16-20 minutes, flipping halfway.
  4. 4Simmer the reserved marinade with the cornflour into a glossy glaze.
  5. 5Check the chicken reaches 74°C (165°F), then brush with the glaze.
  6. 6Serve over rice with sesame seeds and spring onion.

Tips for the best results

  • Always cook the leftover marinade before using it as a sauce.
  • Mirin adds authentic sweetness, but a little extra sugar works too.
