Crispy pork wontons that crackle at first bite with a savoury, gingery centre. The air fryer crisps the little parcels evenly without a pan of hot oil, perfect for parties.

Ingredients

  • 24 wonton wrappers
  • 250 g minced pork
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 2 spring onions, minced
  • 1/2 tsp white pepper
  • Small bowl of water for sealing
  • Spray oil

Method

  1. 1Combine pork, soy sauce, sesame oil, ginger, spring onions and white pepper.
  2. 2Place 1 tsp filling in the centre of each wrapper, wet the edges and gather into a purse or triangle.
  3. 3Preheat the air fryer to 180°C/360°F.
  4. 4Mist the wontons with oil and arrange in a single layer without touching.
  5. 5Cook for 7-9 minutes, flipping halfway, until golden and crisp.
  6. 6Confirm the pork reaches 71°C/160°F before serving with dipping sauce.

Tips for the best results

  • Keep unused wrappers under a damp cloth so they do not dry and crack.
  • A tiny amount of filling gives the crispiest ratio of shell to centre.
