Ingredients

  • 6 large eggs
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp white wine vinegar
  • Salt and pepper to taste
  • Paprika for dusting
  • Chives, finely snipped

Method

  1. 1Preheat the air fryer to 130°C/265°F and place the whole eggs directly in the basket.
  2. 2Cook for 15-17 minutes for firm yolks.
  3. 3Transfer straight to iced water for 5 minutes, then peel.
  4. 4Halve the eggs, scoop the yolks into a bowl and mash with mayonnaise, mustard, vinegar, salt and pepper.
  5. 5Pipe or spoon the filling back into the whites.
  6. 6Dust with paprika and scatter chives before serving.

Tips for the best results

  • The ice bath stops cooking and makes the shells slip off cleanly.
  • Every air fryer runs differently, so test one egg first to dial in your timing.
