Air Fryer Acorn Squash

Tender acorn squash wedges glazed with maple and brown butter notes. The air fryer roasts the dense flesh until soft and caramelised at the edges, a cosy autumn side that comes together far quicker than the oven.

Ingredients

  • 1 acorn squash, cut into wedges and deseeded
  • 2 tbsp melted butter
  • 1 tbsp maple syrup
  • 0.5 tsp fine salt
  • 0.25 tsp black pepper
  • 0.25 tsp ground nutmeg

Method

  1. 1Preheat the air fryer to 190°C (375°F).
  2. 2Halve the squash, scoop out the seeds, and cut into 2.5 cm wedges.
  3. 3Mix the butter, maple syrup, salt, pepper and nutmeg, then brush over the squash.
  4. 4Air fry for 18-24 minutes, flipping halfway.
  5. 5Cook until fork-tender and caramelised.
  6. 6Brush with any remaining glaze and serve.
