Air Fryer Acorn Squash

Tender acorn squash wedges glazed with maple and brown butter notes. The air fryer roasts the dense flesh until soft and caramelised at the edges, a cosy autumn side that comes together far quicker than the oven.
Ingredients
- 1 acorn squash, cut into wedges and deseeded
- 2 tbsp melted butter
- 1 tbsp maple syrup
- 0.5 tsp fine salt
- 0.25 tsp black pepper
- 0.25 tsp ground nutmeg
Method
- 1Preheat the air fryer to 190°C (375°F).
- 2Halve the squash, scoop out the seeds, and cut into 2.5 cm wedges.
- 3Mix the butter, maple syrup, salt, pepper and nutmeg, then brush over the squash.
- 4Air fry for 18-24 minutes, flipping halfway.
- 5Cook until fork-tender and caramelised.
- 6Brush with any remaining glaze and serve.

- A sharp, heavy knife makes cutting the tough squash safer.
