Air Fryer Beef Tenderloin

A whole beef tenderloin roast feels celebratory, and the air fryer roasts it to a rosy, tender centre with a burnished herb crust. It frees up the oven for sides, making it a smart centrepiece for a special dinner.

Ingredients

  • 1 kg centre-cut beef tenderloin
  • 2 tbsp olive oil
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 3 garlic cloves, minced
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp Dijon mustard

Method

  1. 1Tie the tenderloin at intervals with kitchen string so it holds an even shape.
  2. 2Rub with oil and mustard, then press on the garlic, rosemary, salt and pepper.
  3. 3Preheat the air fryer to 190°C (375°F) for 4 minutes.
  4. 4Roast for 25-35 minutes, turning halfway, until the centre reaches 63°C (145°F) for medium.

  6. 6Rest for 10 minutes, then remove the string and carve into thick slices.
