Air Fryer Beef Tenderloin

A whole beef tenderloin roast feels celebratory, and the air fryer roasts it to a rosy, tender centre with a burnished herb crust. It frees up the oven for sides, making it a smart centrepiece for a special dinner.
Ingredients
- 1 kg centre-cut beef tenderloin
- 2 tbsp olive oil
- 2 tsp sea salt
- 1 tsp black pepper
- 3 garlic cloves, minced
- 1 tbsp chopped fresh rosemary
- 1 tbsp Dijon mustard
Method
- 1Tie the tenderloin at intervals with kitchen string so it holds an even shape.
- 2Rub with oil and mustard, then press on the garlic, rosemary, salt and pepper.
- 3Preheat the air fryer to 190°C (375°F) for 4 minutes.
- 4Roast for 25-35 minutes, turning halfway, until the centre reaches 63°C (145°F) for medium.
- 5Transfer to a board and tent loosely with foil.
- 6Rest for 10 minutes, then remove the string and carve into thick slices.

- Tucking the thin tail end under before tying gives a uniform thickness that cooks evenly.
- Rest for the full 10 minutes; a large roast carries a lot of heat and juice that needs to settle.
