Air Fryer Corned Beef

Air fryer corned beef develops a sweet, mustardy glaze and tender, sliceable texture. After a gentle simmer to soften, a short blast in the air fryer sets a sticky crust, making it a standout for St Patrick's Day or a hearty family dinner.
Ingredients
- 1.2 kg corned beef brisket with spice packet
- 2 tbsp wholegrain mustard
- 2 tbsp brown sugar
- 1 tbsp honey
- 1 tsp black pepper
- 1 bay leaf
Method
- 1Simmer the brisket with its spice packet and bay leaf in water for about 2 hours until fork-tender.
- 2Lift out, pat dry and let it cool slightly.
- 3Mix the mustard, sugar, honey and pepper into a glaze and brush over the beef.
- 4Preheat the air fryer to 175°C (350°F) for 4 minutes.
- 5Cook for 35-45 minutes, flipping and re-glazing halfway, until sticky and 71°C (160°F) inside.
- 6Rest for 10 minutes, then slice thinly across the grain.
Tips for the best results
- The initial simmer does the tenderising; the air fryer is there to glaze and finish.
- Slice against the grain into thin pieces for the classic melt-in-the-mouth texture.
