A herb-crusted rack of lamb is an elegant centrepiece, and the air fryer roasts it to a rosy, tender finish. The garlic and rosemary crust turns golden while the meat stays pink and juicy, ideal for a dinner party without the stress.
Ingredients
- 2 racks of lamb, French-trimmed
- 2 tbsp Dijon mustard
- 50 g breadcrumbs
- 2 garlic cloves, minced
- 1 tbsp chopped rosemary
- 1 tbsp chopped parsley
- 2 tbsp olive oil
- 1 tsp salt
Method
- 1Season the racks and sear briefly in a hot pan to colour the fat.
- 2Brush all over with mustard, then press on the mixed breadcrumbs, garlic, herbs and oil.
- 3Preheat the air fryer to 190°C (375°F) for 4 minutes.
- 4Roast bone-side down for 16-22 minutes, turning halfway.
- 5Pull at 63°C (145°F) for a pink medium centre.
- 6Rest for 8 minutes, then carve between the bones into cutlets.

- Wrap the exposed bones in a little foil to stop them charring.
- A quick sear before crumbing helps the crust adhere and adds flavour.
