A herb-crusted rack of lamb is an elegant centrepiece, and the air fryer roasts it to a rosy, tender finish. The garlic and rosemary crust turns golden while the meat stays pink and juicy, ideal for a dinner party without the stress.

Ingredients

  • 2 racks of lamb, French-trimmed
  • 2 tbsp Dijon mustard
  • 50 g breadcrumbs
  • 2 garlic cloves, minced
  • 1 tbsp chopped rosemary
  • 1 tbsp chopped parsley
  • 2 tbsp olive oil
  • 1 tsp salt

Method

  1. 1Season the racks and sear briefly in a hot pan to colour the fat.
  2. 2Brush all over with mustard, then press on the mixed breadcrumbs, garlic, herbs and oil.
  3. 3Preheat the air fryer to 190°C (375°F) for 4 minutes.
  4. 4Roast bone-side down for 16-22 minutes, turning halfway.
  5. 5Pull at 63°C (145°F) for a pink medium centre.
  6. 6Rest for 8 minutes, then carve between the bones into cutlets.
