Air Fryer Hush Puppies

Southern cornmeal hush puppies with a crisp golden crust and fluffy, slightly sweet centre. The air fryer gives these little fritters their signature crunch without a deep fryer.
Ingredients
- 150 g cornmeal
- 100 g plain flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 small onion, finely grated
- 1 egg
- 180 ml buttermilk
- Spray oil
Method
- 1Mix cornmeal, flour, sugar, baking powder and salt in a bowl.
- 2Stir in the grated onion, egg and buttermilk to make a thick batter. Rest 10 minutes.
- 3Preheat the air fryer to 190°C/375°F and line with perforated paper.
- 4Scoop tablespoon mounds onto the paper, spacing them apart, and mist with oil.
- 5Cook for 8-10 minutes, shaking gently once, until golden and firm.
- 6Serve hot with remoulade or honey butter.
Tips for the best results
- Let the batter rest so the cornmeal hydrates and the puppies stay tender.
- Keep the mounds small so they cook through before the outside overbrowns.
