Air Fryer Fish Fillets

Crispy breaded fish fillets with a flaky centre - the air fryer version of your favourite chip-shop fish, minus the deep fryer.
Ingredients
- 4 white fish fillets (cod or haddock)
- 60 g plain flour
- 2 eggs, beaten
- 100 g breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- Cooking spray
- 1 lemon, to serve
Method
- 1Pat the fillets dry and season lightly.
- 2Coat each in flour, then egg, then the breadcrumbs mixed with salt, pepper and paprika.
- 3Preheat the air fryer to 200°C / 400°F for 3 minutes.
- 4Place the fillets in a single layer and spray with oil.
- 5Air fry for 10-12 minutes, flipping halfway, until golden and 63°C / 145°F inside.
- 6Serve with lemon wedges.
Tips for the best results
- Choose fillets of even thickness so they cook at the same rate.
- Spray the coating with oil for a deep golden crust.
