Flank steak takes on a marinade beautifully and cooks in minutes in the air fryer. The intense heat chars the surface while keeping the inside pink, giving you tender slices perfect for fajitas, salads or rice bowls.
Ingredients
- 600 g flank steak
- 3 tbsp soy sauce
- 2 tbsp olive oil
- 2 garlic cloves, crushed
- 1 tbsp brown sugar
- 1 tsp ground cumin
- ½ tsp black pepper
Method
- 1Whisk together soy sauce, oil, garlic, sugar, cumin and pepper in a shallow dish.
- 2Add the flank steak and marinate for at least 30 minutes, or overnight.
- 3Preheat the air fryer to 200°C (400°F) for 3 minutes.
- 4Cook the steak for 8-12 minutes, flipping halfway, until it reaches 63°C (145°F).
- 5Rest the meat for 8 minutes to keep it juicy.
- 6Slice thinly against the grain at a slight angle before serving.

- Flank is a lean, fibrous cut, so slicing thinly across the grain is essential for tenderness.
- Do not cook past medium or it will toughen; a probe helps you stop at the right moment.
