Air Fryer Ribeye Steak

A well-marbled ribeye turns out beautifully in the air fryer, with a deep crust and juicy pink centre. The rapid circulating heat sears the fat and locks in flavour without a smoking hot pan or a splattered hob.
Ingredients
- 2 ribeye steaks, about 250 g each and 3 cm thick
- 1 tbsp olive oil
- 1 tsp flaky sea salt
- ½ tsp coarse black pepper
- 1 tsp garlic granules
- 2 tbsp softened butter
- 1 sprig fresh thyme, leaves picked
Method
- 1Take the steaks out of the fridge 30 minutes before cooking and pat them thoroughly dry.
- 2Rub with olive oil, then season all over with salt, pepper and garlic granules.
- 3Preheat the air fryer to 200°C (400°F) for 3 minutes.
- 4Lay the steaks in the basket in a single layer and cook for 10-14 minutes, flipping halfway.
- 5Check with a probe: 63°C (145°F) for medium; pull a few degrees earlier for medium-rare.
- 6Top each steak with butter and thyme, then rest on a warm plate for 5 minutes before serving.

- Dry steaks brown far better, so blot away any surface moisture before seasoning.
- Resting is not optional; it lets the juices redistribute so they stay in the meat, not on the board.
