Thin, delicate flounder fillets with a light lemon butter and herb crumb topping. The air fryer cooks this fragile fish quickly and gently so it stays tender and flaky.
Ingredients
- 4 flounder fillets
- 20 g butter, melted
- 40 g panko breadcrumbs
- 2 tbsp grated parmesan
- 1 garlic clove, minced
- Zest of 1 lemon
- 1 tbsp chopped parsley
- Salt and black pepper
Method
- 1Pat the fillets dry and brush with melted butter.
- 2Mix the panko, parmesan, garlic, lemon zest, parsley, salt and pepper.
- 3Press the crumb mixture gently onto each fillet.
- 4Preheat the air fryer to 190°C/375°F for 3 minutes.
- 5Air fry for 8-10 minutes until golden and the fish reaches 63°C/145°F.
- 6Serve with lemon wedges.
