Air Fryer Gammon Joint

A tender gammon joint with a sweet, sticky honey glaze, roasted juicy in the air fryer. It carves beautifully hot for a festive dinner or cold for sandwiches through the week.

Ingredients

  • 1.3 kg unsmoked gammon joint
  • 3 tbsp honey
  • 2 tbsp brown sugar
  • 1 tbsp English mustard
  • 1 tsp ground cloves
  • 1 tbsp orange juice

Method

  1. 1Preheat the air fryer to 170°C/340°F.
  2. 2Wrap the gammon loosely in foil and air fry for 30 minutes, flipping halfway.
  3. 3Mix the honey, sugar, mustard, cloves and orange juice into a glaze.
  4. 4Unwrap the gammon, score the fat into diamonds and brush with glaze.
  5. 5Air fry uncovered for a further 15-25 minutes, glazing twice, until sticky and caramelised.
  6. 6Check it reaches 71°C/160°F, then rest for 15 minutes before carving.

Tips for the best results

  • Foil for the first stage keeps the joint moist.
  • Reglaze frequently at the end for a deep, glossy crust.
