Crispy chicken pieces coated in a sweet, savoury and slightly spicy sticky sauce, the takeaway favourite made lighter. The air fryer delivers a crunchy coating without deep frying, so you can enjoy General Tso guilt-free.
Ingredients
- 600 g chicken thigh, cubed
- 4 tbsp cornflour
- 1 egg, beaten
- 3 tbsp soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tbsp sugar
- 2 cloves garlic, minced
- 1/2 tsp dried chilli flakes
- Oil spray
Method
- 1Coat the chicken in egg then cornflour.
- 2Preheat the air fryer to 200°C (400°F) and spray with oil.
- 3Cook for 12-15 minutes, shaking halfway, until crisp.
- 4Simmer the soy, hoisin, vinegar, sugar, garlic and chilli into a glossy sauce.
- 5Check the chicken reaches 74°C (165°F), then toss in the sauce.
- 6Serve over rice with spring onions.

- Thigh meat stays juicier than breast for this dish.
- Thicken the sauce with a little cornflour slurry if needed.
