Japanese pork gyoza with delicate pleats and a golden, crisp crust. The air fryer delivers that pan-fried texture with almost no oil, making these dumplings a fast, moreish starter.
Ingredients
- 20 gyoza wrappers
- 250 g minced pork
- 2 cups finely chopped cabbage
- 2 tsp grated ginger
- 2 cloves garlic, minced
- 2 spring onions, minced
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Spray oil
Method
- 1Mix pork, cabbage, ginger, garlic, spring onions, soy sauce and sesame oil into a paste.
- 2Spoon 1 tsp onto each wrapper, dampen the edge and pleat firmly into a crescent.
- 3Preheat the air fryer to 180°C/360°F.
- 4Spray the gyoza lightly with oil and set flat-side down in a single layer.
- 5Cook for 8-10 minutes, flipping halfway, until crisp and golden.
- 6Ensure the filling reaches 71°C/160°F and serve with a ponzu or soy dip.

- Press out excess moisture from the cabbage to keep the wrappers crisp.
- Freeze uncooked gyoza on a tray, then bag them for quick snacks later.
