Japanese pork gyoza with delicate pleats and a golden, crisp crust. The air fryer delivers that pan-fried texture with almost no oil, making these dumplings a fast, moreish starter.

Ingredients

  • 20 gyoza wrappers
  • 250 g minced pork
  • 2 cups finely chopped cabbage
  • 2 tsp grated ginger
  • 2 cloves garlic, minced
  • 2 spring onions, minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Spray oil

Method

  1. 1Mix pork, cabbage, ginger, garlic, spring onions, soy sauce and sesame oil into a paste.
  2. 2Spoon 1 tsp onto each wrapper, dampen the edge and pleat firmly into a crescent.
  3. 3Preheat the air fryer to 180°C/360°F.
  4. 4Spray the gyoza lightly with oil and set flat-side down in a single layer.
  5. 5Cook for 8-10 minutes, flipping halfway, until crisp and golden.
  6. 6Ensure the filling reaches 71°C/160°F and serve with a ponzu or soy dip.

  • Press out excess moisture from the cabbage to keep the wrappers crisp.
