Show-stopping hasselback potatoes with fanned, crispy layers and soft, buttery centres. The air fryer crisps every thin slice while keeping the inside fluffy, delivering a restaurant-worthy side without a long oven roast.
Ingredients
- 4 medium potatoes (about 200 g each)
- 2 tbsp melted butter
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 0.5 tsp fine salt
- 0.25 tsp black pepper
- 1 tbsp chopped chives
Method
- 1Preheat the air fryer to 190°C (375°F).
- 2Slice each potato thinly at 3 mm intervals, cutting almost but not all the way through.
- 3Mix the butter, oil, garlic, salt and pepper, then brush over and into the slits.
- 4Air fry for 20 minutes, then brush again with the butter mixture.
- 5Cook a further 10-15 minutes until crisp and fanned open.
- 6Scatter with chives and serve.
Tips for the best results
- Rest the potato in a wooden spoon to stop your knife cutting all the way through.
- Brushing twice gets the butter deep into the slices.
- Add grated cheese in the last 3 minutes for a loaded version.
