A boneless pork loin roasts up juicy with a savoury herb crust in the air fryer, ready far quicker than in the oven. The compact heat keeps the lean meat moist while browning the outside beautifully.
Ingredients
- 1.2 kg boneless pork loin
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp fresh rosemary, chopped
- 1 tsp dried thyme
- 1 tsp salt
- 1 tsp black pepper
Method
- 1Pat the loin dry and rub with oil, garlic, rosemary, thyme, salt and pepper.
- 2Preheat the air fryer to 180°C/360°F.
- 3Place the loin fat-side up in the basket.
- 4Cook 35-45 minutes, turning halfway, until browned.
- 5Check the internal temperature reaches 63°C/145°F at the thickest point.
- 6Rest, loosely tented, for 10 minutes before slicing.
