Air Fryer Pork Loin Roast

Ready in about 50 minutes.

Updated 7 September 2026

A boneless pork loin roasts up juicy with a savoury herb crust in the air fryer, ready far quicker than in the oven. The compact heat keeps the lean meat moist while browning the outside beautifully.

Ingredients

  • 1.2 kg boneless pork loin
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1 tsp black pepper

Method

  1. 1Pat the loin dry and rub with oil, garlic, rosemary, thyme, salt and pepper.
  2. 2Preheat the air fryer to 180°C/360°F.
  3. 3Place the loin fat-side up in the basket.
  4. 4Cook 35-45 minutes, turning halfway, until browned.
  5. 5Check the internal temperature reaches 63°C/145°F at the thickest point.
  6. 6Rest, loosely tented, for 10 minutes before slicing.

Tips for the best results

  • Resting is essential so the juices redistribute rather than run out.
  • Score the fat cap in a criss-cross for better browning.
