Air Fryer Sirloin Steak

Sirloin is a great-value steak with proper beefy flavour, and the air fryer gives it a fast, even sear. In barely ten minutes you get a caramelised crust and a tender, juicy middle with almost no fuss or mess.
Ingredients
- 2 sirloin steaks, about 220 g each
- 1 tbsp vegetable oil
- 1 tsp salt
- ½ tsp cracked black pepper
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
Method
- 1Rest the steaks at room temperature for 20 minutes and pat them dry.
- 2Mix the mustard and Worcestershire sauce with the oil and rub over the meat, then season.
- 3Preheat the air fryer to 200°C (400°F) for 3 minutes.
- 4Cook for 8-12 minutes, flipping once halfway through.
- 5Check for 63°C (145°F) at the centre for medium doneness.
- 6Rest for 5 minutes before slicing across the grain to serve.
Tips for the best results
- Slicing against the grain shortens the muscle fibres and makes each bite more tender.
- Snip through the outer band of fat in a couple of places to stop the steak curling.
