Air Fryer Sirloin Steak

Sirloin is a great-value steak with proper beefy flavour, and the air fryer gives it a fast, even sear. In barely ten minutes you get a caramelised crust and a tender, juicy middle with almost no fuss or mess.

Ingredients

  • 2 sirloin steaks, about 220 g each
  • 1 tbsp vegetable oil
  • 1 tsp salt
  • ½ tsp cracked black pepper
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce

Method

  1. 1Rest the steaks at room temperature for 20 minutes and pat them dry.
  2. 2Mix the mustard and Worcestershire sauce with the oil and rub over the meat, then season.
  3. 3Preheat the air fryer to 200°C (400°F) for 3 minutes.
  4. 4Cook for 8-12 minutes, flipping once halfway through.
  5. 5Check for 63°C (145°F) at the centre for medium doneness.
  6. 6Rest for 5 minutes before slicing across the grain to serve.

Tips for the best results

  • Slicing against the grain shortens the muscle fibres and makes each bite more tender.
  • Snip through the outer band of fat in a couple of places to stop the steak curling.
