Air Fryer Zucchini Chips

Crunchy, golden courgette chips with a crisp parmesan crumb coating. The air fryer makes them shatteringly crisp with a fraction of the oil of frying, a moreish veg-packed snack the whole family will devour.
Ingredients
- 2 medium courgettes, thinly sliced
- 50 g panko breadcrumbs
- 30 g grated parmesan
- 0.5 tsp garlic powder
- 0.5 tsp fine salt
- 1 egg, beaten
- Olive oil spray
Method
- 1Preheat the air fryer to 180°C (360°F).
- 2Pat the courgette slices dry with kitchen paper.
- 3Mix the panko, parmesan, garlic powder and salt in a bowl.
- 4Dip each slice in egg, then press into the crumb mix.
- 5Arrange in a single layer, spritz with oil, and air fry for 10-14 minutes, flipping halfway.
- 6Cook until golden and crisp, then serve straight away.
Tips for the best results
- Slice thinly and evenly, about 5 mm, for the crispest chips.
- Salt and rest the slices, then blot to remove moisture.
- Serve fresh as they soften on standing.
