Air Fryer Zucchini Chips

Crunchy, golden courgette chips with a crisp parmesan crumb coating. The air fryer makes them shatteringly crisp with a fraction of the oil of frying, a moreish veg-packed snack the whole family will devour.

Ingredients

  • 2 medium courgettes, thinly sliced
  • 50 g panko breadcrumbs
  • 30 g grated parmesan
  • 0.5 tsp garlic powder
  • 0.5 tsp fine salt
  • 1 egg, beaten
  • Olive oil spray

Method

  1. 1Preheat the air fryer to 180°C (360°F).
  2. 2Pat the courgette slices dry with kitchen paper.
  3. 3Mix the panko, parmesan, garlic powder and salt in a bowl.
  4. 4Dip each slice in egg, then press into the crumb mix.
  5. 5Arrange in a single layer, spritz with oil, and air fry for 10-14 minutes, flipping halfway.
  6. 6Cook until golden and crisp, then serve straight away.

Tips for the best results

  • Slice thinly and evenly, about 5 mm, for the crispest chips.
  • Salt and rest the slices, then blot to remove moisture.
  • Serve fresh as they soften on standing.
