Air Fryer Blueberry Muffins

Tender, bakery-style blueberry muffins with domed tops and juicy bursts of fruit. The air fryer bakes them quickly with a lovely golden crumb, no big oven needed for a small batch.
Ingredients
- 200 g plain flour
- 2 tsp baking powder
- 100 g sugar
- 1 egg
- 120 ml milk
- 60 ml oil
- 1 tsp vanilla
- 120 g blueberries
Method
- 1Whisk the flour, baking powder and sugar together.
- 2Beat in the egg, milk, oil and vanilla to a smooth batter.
- 3Fold through the blueberries.
- 4Preheat the air fryer to 160°C/320°F and fill lined muffin moulds.
- 5Cook for 14-17 minutes until risen and a skewer comes out clean.
- 6Cool for 5 minutes before removing from the moulds.
Tips for the best results
- Toss the blueberries in a little flour to stop them sinking.
- Bake at a lower temperature so the tops do not scorch.
