Air Fryer Cornbread

A golden, slightly sweet cornbread with a tender crumb and lightly crisp edges. The air fryer bakes it evenly in a small tin, making it the perfect quick side for chilli or a Sunday spread.
Ingredients
- 150 g cornmeal
- 100 g plain flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 240 ml buttermilk
- 1 egg
- 50 g butter, melted
Method
- 1Whisk together the cornmeal, flour, sugar, baking powder and salt.
- 2In another bowl mix the buttermilk, egg and melted butter.
- 3Combine the wet and dry ingredients until just mixed.
- 4Pour into a greased tin that fits your basket.
- 5Preheat the air fryer to 175°C/350°F.
- 6Air fry for 15-18 minutes until golden and a skewer comes out clean.
- 7Cool for 10 minutes before slicing.
Tips for the best results
- Do not overmix or the cornbread will turn dense.
- For a savoury version, fold in sweetcorn and diced jalapeno.
