Air Fryer Parsnips

Honey-glazed roast parsnips with sticky, caramelised edges and a tender middle. The air fryer gives them that Sunday-roast crunch in a fraction of the time, perfect alongside a joint of meat or a festive spread.
Ingredients
- 600 g parsnips, peeled and quartered lengthways
- 1.5 tbsp olive oil
- 1 tbsp honey
- 0.5 tsp fine salt
- 0.25 tsp black pepper
- 1 tsp fresh thyme leaves
Method
- 1Preheat the air fryer to 190°C (375°F).
- 2Parboil the parsnips for 4 minutes, then drain and steam-dry in the colander.
- 3Toss with oil, salt, pepper and thyme until coated.
- 4Air fry for 12 minutes, shaking halfway.
- 5Drizzle over the honey, toss, and cook a further 6-10 minutes until golden and sticky.
- 6Serve hot with an extra scatter of thyme.
Tips for the best results
- Cut out any woody cores from larger parsnips.
- Parboiling first guarantees a fluffy interior.
- Add the honey late so it caramelises rather than burns.
