Tall, crisp and airy Yorkshire puddings with a soft centre, cooked in the air fryer for a Sunday roast. Getting the fat smoking hot is the trick to a dramatic rise.

Ingredients

  • 140 g plain flour
  • 4 eggs
  • 200 ml milk
  • 1/2 tsp salt
  • 4 tsp beef dripping or vegetable oil

Method

  1. 1Whisk the flour, eggs, milk and salt into a smooth batter and rest for 30 minutes.
  2. 2Add a teaspoon of dripping to each metal pudding tin.
  3. 3Preheat the air fryer to 200°C/400°F with the tins inside until the fat is smoking hot.
  4. 4Carefully pour the batter into the hot tins to two-thirds full.
  5. 5Air fry for 12-15 minutes until puffed, tall and deep golden.
  6. 6Do not open the drawer early or they may collapse.

Tips for the best results

  • Cold batter hitting hot fat gives the biggest rise.
  • Resist peeking, the sudden temperature drop can deflate them.
