Air Fryer Egg Rolls

Crunchy Chinese-takeaway egg rolls without the deep-frying mess. The air fryer crisps the wrappers to a shattering, golden shell while the pork-and-cabbage filling stays juicy inside, using barely a brush of oil.
Ingredients
- 8 egg roll wrappers
- 250 g minced pork
- 3 cups shredded green cabbage
- 1 carrot, grated
- 2 spring onions, sliced
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp grated ginger
- 1 tbsp cornflour mixed with 2 tbsp water
- Spray oil
Method
- 1Brown the pork in a pan, then stir in cabbage, carrot, spring onions, soy sauce, sesame oil and ginger until the cabbage wilts. Cool fully.
- 2Lay a wrapper as a diamond, add 2 tbsp filling near the bottom corner, fold sides in and roll tightly, sealing the tip with the cornflour paste.
- 3Preheat the air fryer to 190°C/375°F.
- 4Spray the rolls all over with oil and arrange seam-side down in a single layer, leaving space between each.
- 5Cook for 8-10 minutes, flipping halfway, until deep golden and crisp.
- 6Rest 2 minutes, then serve with sweet chilli or soy dipping sauce.
Tips for the best results
- Cool the filling completely or steam will make the wrappers soggy and hard to roll.
- Do not overfill; 2 tbsp per roll keeps them sealed and crunchy.
