Juicy pork potstickers with crisp, blistered bottoms straight from the air fryer. A quick spritz of oil crisps the pleated dumplings while keeping the savoury filling tender and steamy inside.
Ingredients
- 20 round dumpling wrappers
- 250 g minced pork
- 2 cups finely shredded napa cabbage
- 2 spring onions, minced
- 1 tbsp soy sauce
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1 tsp sesame oil
- Spray oil
Method
- 1Combine pork, cabbage, spring onions, soy sauce, ginger, garlic and sesame oil.
- 2Place 1 tsp filling on each wrapper, wet the rim, fold and pleat to seal into a half-moon.
- 3Preheat the air fryer to 180°C/360°F.
- 4Mist the potstickers with oil and arrange upright in a single layer.
- 5Cook for 8-10 minutes, flipping halfway, until golden and crisp.
- 6Check the pork reaches 71°C/160°F, then serve with a soy-vinegar dip.
Tips for the best results
- A light mist of oil on the base gives that signature crisp potsticker bottom.
- Do not crowd the basket or the dumplings will steam rather than crisp.
