Juicy pork potstickers with crisp, blistered bottoms straight from the air fryer. A quick spritz of oil crisps the pleated dumplings while keeping the savoury filling tender and steamy inside.

Ingredients

  • 20 round dumpling wrappers
  • 250 g minced pork
  • 2 cups finely shredded napa cabbage
  • 2 spring onions, minced
  • 1 tbsp soy sauce
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1 tsp sesame oil
  • Spray oil

Method

  1. 1Combine pork, cabbage, spring onions, soy sauce, ginger, garlic and sesame oil.
  2. 2Place 1 tsp filling on each wrapper, wet the rim, fold and pleat to seal into a half-moon.
  3. 3Preheat the air fryer to 180°C/360°F.
  4. 4Mist the potstickers with oil and arrange upright in a single layer.
  5. 5Cook for 8-10 minutes, flipping halfway, until golden and crisp.
  6. 6Check the pork reaches 71°C/160°F, then serve with a soy-vinegar dip.
