Air Fryer Fried Green Tomatoes

Crisp, cornmeal-crusted fried green tomatoes with a tangy, tender centre, a Southern classic made light. The air fryer gives them a golden crunch using a fraction of the oil, so they never turn greasy.
Ingredients
- 3 firm green tomatoes, sliced 1 cm thick
- 60 g cornmeal
- 40 g plain flour
- 0.5 tsp fine salt
- 0.5 tsp paprika
- 1 egg, beaten
- 2 tbsp buttermilk
- Olive oil spray
Method
- 1Preheat the air fryer to 200°C (400°F).
- 2Whisk the egg with the buttermilk, and mix the cornmeal, flour, salt and paprika in a second bowl.
- 3Dip each tomato slice in the egg, then coat in the cornmeal mix.
- 4Arrange in a single layer and spritz both sides with oil.
- 5Air fry for 8-12 minutes, flipping halfway, until golden and crisp.
- 6Serve hot with a dip.

- Use firm, unripe green tomatoes so they hold their shape.
- Press the coating on firmly for a thick crust.
